Our fish cutters are some of the fastest and most efficient in the world.  All of our fish cutters have at least 10 years of experience under their belts. Each of them have their own styles, but the core technique is the same. That is what we will illustrate on this page. In video format we will go through the step-by-step process for filleting the most common species of fish. We hope that this page will offer an education for the public and a “refresher course” for the chefs.
